Peanut Butter S'more Cookies
I really liked the dough better than the cookies for this recipe. I think I'll make another batch and just freeze the dough in balls to eat at my leisure. :0)

Pumpkin Overload
My sister was here for the Thanksgiving weekend and we got a little carried away. She needed to make this pumpkin cake. It looked really good and was super easy. 1 and 3/4 boxes of spice cake mix, 1 and 3/4 cup pumpkin and 1/2 cup of chocolate chips. It wasn't that great.
Then we got looking at Pintrest. Bad idea. I'm totally hooked and have done so many things off of there already. It's crazy! But we found this recipe for Pumpkin Whoopie pies and we had extra pumpkin left from her cake so we had to try them.
I know this picture is blurry but I wanted you to look and drool. They were so good!
We also found a recipe for a baked oatmeal on Pintrest and had more pumpkin left so we tried that too.
We had to have some cocoa with it. What is breakfast without cocoa?
I love being able to use my fun pink stuff!
We ended up adding some brown sugar to the oatmeal and we think we need to modify it a bit more. (A lot more) but it was still yummy.
My favorite part... Sharing the weekend with my sister and having a blast!

Rolo Bliss
I promise that I have not been MIA. Just a very crazy August in my house. I haven't been home much and when I have, I haven't felt like doing more than blog surfing and tv watching. But, school has started again and I have a lot more time on my hands with 3 of the 4 kids at school so I am in the mood to craft. Or bake. Baking is more like it.
My sister-in-law made these amazing cookies for our family dinner this last week and I just had to get the recipe and make them. I had everything in my house to make them. Really rare for me to have rolo's in my house but I had wanted them camping. I put one in a caramel flavored marshmellow and roasted the whole thing and then made it a smore. Sooooo Goooood!!!
Anyways. On the the recipe. You will need;
1 Devils Food cake mix. (My sister-in-law says that it really makes a difference in having a devil's food to just a different chocolate one. I didn't notice. I just had a plain chocolate one.)
1/3 cup oil
2 eggs
and...
That's it. Mix together and put rolo in the middle of a small ball. The smaller, the better.
Bake at 350* for 9 minutes. Enjoy!
I made them with my kids for FHE and had so much fun having them help. I used my little cookie scoop and then we flattened it out a bit to put the rolo in and then wrapped them up.
I did spray my pans and I wish I had cooked them just a minute longer.
I liked how hers were just slightly crunchy on the edges and soft and gooey in the middle.
But man are they good!

Whoopie Pies
Whoopie Pies
2 cups flour
1/2 cup cocoa
1 t. baking soda
1/2 t. salt
1 cup butter milk
1 t. vanilla
1/2 margarine or butter
1 cup sugar
1 egg
Heat oven to 350. Grease cookie sheets. Mix the first 4 ingredients in medium bowl. Mix vanilla with the buttermilk. *Side-note. I don't ever use real buttermilk in any of my recipes. I add a Tbsp of lemon juice to whole milk or evaporated milk and let it sit for 5 minutes.* Beat butter and sugar together. Add the egg. Pour half of the flour mix in. Combine well. Add all of buttermilk. Mix til just blended. Add the rest of the flour mix. Spoon onto sheets and flatten with spoon. I used my medium cookie scoop from Pampered Chef but to get more I think I'll use the small one next time. I didn't flatten them either but with the smaller ones I will for sure. Bake them for 10 minutes. Cool for 2 minutes and move to cooling racks.
Filling
1/2 cup margarine or butter
1 1/2 cup powdered sugar
1 cup marshmallow creme *I used the whole container.* ;0)
1 t. vanilla
food coloring
This made a lot and I had some extra that I put on graham crackers for an added treat. Use any color you want and make a double batch because you will eat them all. :0)
